RosewoodRosewood – this beautiful timber was used by Victorinox for all knife handles until 1974. Attractive to the eye and comfortable in the hand it is still preferred by professional enthusiasts. The oils in the timber have a natural antiseptic property. These knives should never be soaked in water or cleaned in a dishwasher, but washed under a running tap.

FibroxFibrox – The workhorse of the range – non-slip, ergonomic in design, sterilisable and durable. This handle is preferred in most commercial applications for chefs and butchers. Available in Black, Red, Yellow and Blue where distinction in food preparation areas is required.

MicrobanMicroban – Built into the Fibrox handle during manufacture, Microban provides continuous protection against bacteria for the life of the knife. Upon contact with bacteria, Microban penetrates the bacteria’s cell wall and destroys its ability to function, grow and reproduce. Particularly applicable for institutional kitchens and healthcare facilities where hygiene is critical, the handle is distinguishable by its dark blue colour.

PolypropylenePolypropylene – This nylon material is used on the small paring knives and table ware. A cost effective solution for small knives, it
is available in black, red, blue & white.

Forged‘Grand Maître’ the Forged range – The latest range from Victorinox is a superb collection of Chefs Knives. Pepper Mills from the USA

The grinding mechanisms in chef Professional Series mills are crafted from solid, cutlery-grade stainless steel to withstand the rigors of commercial use. Spring-loaded for easy grind adjustment, they're engineered to last for generations and were rated a best buy from Cook's Illustrated.

 

Tormek

TormekThe key word when sharpening the Tormek way is repeatability. The knives are guided in jigs which are adjustable to give the desired angle on the edge. You remove only a minute fraction of the steel at each sharpening, which makes it fast. An extra benefit is that your knives last longer.

The water cooled slow speed grindstone is in harmony with the physical laws governing the steel blade – the edge does not overheat and lose its hardness.

The water lubricated grindstone and the final power honing on the leather honing wheel work in the same way as benchstone sharpening except that the motorized process speeds up the work. The leather wheel is impregnated with honing compound and polishes the edge to a razor sharpness.

No grinding dust is produced to pollute the air. The steel particles are deposited into the water trough.

The Tormek method is safe. Since no sparks are produced, there is no risk to your eyes and you can safely use the machine in areas of high fire risk.

The fully uncased Tormek 4000 is suitable for manufacturing plants, where multiple knives are sharpened daily.
